In an intimate setting at Counter Reformation, guests invited by Palm Springs Life gathered for an exclusive wine tasting on Oct. 10 in collaboration with Parker Palm Springs. Pours of rare wines paired well with small bites from the newly reimagined menu by chef Hervé Glin, who was in attendance. The menu, executed by executive chef Pedro Baroso that night, celebrates coastal flavors and brings a refreshed energy to Counter Reformation, an exclusive, upscale wine bar with only 22 first-come, first-served seats.
Highlights from the menu include grated bottarga (cured fish roe) atop lobster Bolognese on chopsticks, oysters with a calamansi granita, and truffle chimichurri over a prime beef carpaccio. A global wine selection spans 16 rare varietals from 11 countries — Weingut Heiligenblut Silvaner from Rheinhessen, Germany; Casal da Azenha Red Paulo da Silva from Lisboa, Portugal; and Domaine de la Pépière Melon de Bourgogne from Loire Valley, France, to name a few.
